Blast chiller, not only at the restaurant


Among the appliances that for some time are more and more in home kitchens, there are the blast chillers, until a few years ago found only in professional kitchens of restaurants and facilities with canteen services.

It is, in short, a machine for cooling hot foods in a fast way. With the rapid freezing is possible to bring the food from the cooking temperature to -18° to the core in a rapid way, so as to keep all the qualities of the product and find them intact at the time of thawing.

Defrosting is a controlled function which allows you to defrost foods quickly and evenly, so as to keep moisture and flavor of the product, checking all the action to have the product ready for use at the right time thawed and stored at +3°.

Even the wine and beverage cooling function is very useful because it avoids filling the fridge, allowing you to cool down in a few minutes the bottles required.

With Fresco is possible, programming, slow cooking at low temperature, no more than 75°, such as chefs, in order to enhance the flavor of food. May be preceded by thawing or temperature maintenance, and then be ready to return home if you are out.

The function plate ready-regeneration allows to program the regeneration one day before. The dish is maintained at +3° and then it starts the programmed regeneration, that get the temperature up to the service one, or +65°.

It is, therefore, possible to maintain a constant temperature without the risk of loss of moisture, thanks to the heat of this appliance, which does not dry the food. Great for pastry, when, for example, to keep constant the liquid state of the chocolate.

The function sourdough allows to maintain constant the temperature of leavening of bread, brioche, pizza, so as to complete the cycle of yeast fermentation for dough ideals, much more digestible.

The croissants, for example, exploiting all the functions of Fresco, can be thawed by programming the leavening also to make them ready to be fired and cooked at the right temperature after a correct and complete leavening.
